Diversity, Health and Sustainability
Located in Harlem’s Kalahari Building, a sustainable green building, using low energy efficient lighting the
Cafe at MIST Harlem happily serves our customers who represent the diversity of Harlem and beyond.
Celebrating fine drinks and fresh foods, we have chosen a menu that we feel is not only delicious for any
palate but is socially diverse, healthy and sustainable. From the direct trade coffee and locally sourced
organic hormone-free milk to our wild salmon and broccolini, we strive to use the best products, free of
preservatives and harmful materials.
None of our products contain GMOs, corn or fructose syrup and all of our market plates, sandwiches
and pastries are either made on premises or delivered daily. Our belief is that the key to sustainability in
business requires integrity and ethics, and to do so attention must be made as to the sustainability of
our environment as well as the health of our community.
Battenkill Valley Creamery
All of our whole, skim and cream available in our cafe is sourced locally from Battenkill Valley Creamery
located in Salem, NY. Family owned with a source of over 350 cows, they process the milk from cow to
bottle in under 8 hours every day which can be bought on site, They produce their own locally sold ice
cream and have even brought back bottled home delivery.
With their cows born and raised on their farm and fed a natural diet of hay, alfalfa and other forages,
they employ nutritionists every other week to consult on their cows’ diet and health. No growth
hormones, pesticides or insecticides are allowed on their 1000 acre plus farm. Battenkill has been
recognized by Cornell University’s Department of Food Science as producing the highest quality in milk.
Intelligentsia Coffee
We have chosen to partner with Intelligentsia Roasters as our coffee purveyor for their strong ethical
business practices and devotion to providing the best quality beans.
After much research into fine roasting companies available, we have found Intelligentsia’s diligent
attention to the farms and growers they work hands-on with to be in line with our own beliefs.
Intelligentsia goes beyond international Fair Trade standards, working 365 days a year around the globe
with their sources, paying above average prices to farmers and ensuring that their inspections are not
only focused on the high quality of the product, but also the environmental impact, addressing issues of
herbicides, pesticides, disposal of waste water and maintenance of forest cover.
Founded by Doug Zell (ranked #1 most influential coffee person on Food Republic) and Emily Mange in
1995, Intelligentsia is regarded to be among the top roasters in the nation, making best-of lists both
locally and nationally. They were the first roasters in the nation to create their own direct trade program
with their growers and are also responsible for the vigorous and intensive training of their baristas,
leading to numerous national and international barista championships.
Farm-To-Table
In line with our belief in supporting our environment and community, our chef, Carl Alioto, follows farm-
to-table practices, using the freshest ingredients available from local sources. We buy our produce
directly from farmers whenever possible, ensuring their freshness, safety and seasonality. Our wild
salmon is mercury free and our chicken fresh and free range.
